Subscriptions:

How do subscriptions work?

Subscriptions ship monthly with two unique coffees each delivery.

I ordered after the deadline but want to get this month's coffee

Reach out to us and we'll do our best to fit you in for the current month.

How do I find out what the coffees will be each month?

Take a look on the main page, we share a bit about what's in the upcoming month's box at the start of the month.

How are the coffees chosen?

We taste through samples each season and pick what we're excited to share.

Can I swap the coffees?

Subscription selections are curated, but get in touch and we'll see what we can do.

Gifting:

How are gift subscriptions handled?

Choose the gift duration at checkout and we'll ship directly to your recipient.

Do you have any gift cards?

Yes! You'll find them in "extras"

Brewing:

How long should I rest the beans?

We recommend waiting for 2 weeks off roast for best results. Our roasting style is light and they should improve with rest as well as benefit from an extended shelf life of about 2 months.

What is your preferred water chemistry?

Low ppm soft water — Vancouver tap is what we use (about 30ppm), but if your water is hard or not great for brewing we recommend Lotus drops Light & Bright recipe or Third Wave Water at half strength.

What is the best temp to brew with?

There's no real best temperature, so play around with what works for you. We mostly brew pourover at 96°C and espresso at 93°C, but there are some really good recipes out there using temps as low as 86C

V60-02 (CERAMIC) • 1:17 RATIO (15G.:255G.) • 96C

  • 0:00 - 55g. Bloom, gentle swirl just to make sure everything is saturated
  • 1:00 - 155g. Center pour with dime sized circular motion until about 120g. then spiral pour out to include outer rim until 155g. finish pour around 1:20
  • 1:45 - 255g. Center pour with dime sized circular motion until about 220g. then spiral pour out to include outer rim until 255g. finish pour around 2:05; gentle swirl to aid in even drawdown

finish around 3:00 depending on grinder and filters
