Chelbesa OneKurume & Wolisho

grape • apricot • mineral • sencha

Kurume & Wolisho varieties grown by smallholders and delivered to Chelbesa One washing station in Gedeb, Ethiopia. Depulped & dry fermented in tanks for 2-3 days before being washed and dried on raised beds.

This lot was cultivated by 476 smallholder producers on 2-3ha garden plots in Chelbesa, Gedeb, and delivered to the Chelbesa One washing station (managed by SNAP) to be processed. Unusual for Ethiopia washed process, this lot was fermented without water after depulping, aiding in a more grape & apricot fruitiness, mineral complexity, and sencha tea finish.

Chelbesa One

476 smallholder farmers who deliver ripe fruit to Chelbesa One washing station (managed by SNAP).

SNAP was established in Addis Ababa in 2008, by Negusse, a notably passionate coffee person who used to work in computers, but wanted to shift into specialty coffee. Nearly two decades later, he's still at it.

SNAP built a wet mill in 2019 in a small hamlet called Danche within the Chelbesa Village with the hope of purchasing ripe cherry from the nearby farmers in Chelbesa Village and offering an alternative sales channel to them. The fermentation tanks of the wet mill are lined with ceramic tile, an unusual choice for wet mills in the country. This material choice has potential to help speed up the fermentation through heat retention of the ceramic as beneficial microbes get to work. 476 smallholder outgrowers contributed to this lot.

Kurume & Wolisho

Wolisho and Kurume are the colloquial names for JARC 74110 and 74112, two Landraces known to thrive in this area of Gedeb. Bred in the 1960s and officially released as Landraces in 1974, look and you'll find this string of numbers often in coffees originating from this region of the country.

Processing

Depulped & dry fermented in tanks for 2-3 days before being washed and dried on raised beds.
