2025 Colombia • Anaerobic Washed

Sidra grown and processed by Ildefonso Córdoba on his family farm in Brussels, Huila, Colombia. Once the ripe coffee fruit has been picked, it is fermented as whole cherry in sealed bags for 60-70 hrs, then depulped and fermented underwater for 48hrs. While the process is certainly categorically "anaerobic," Ilde's got a gentle touch, implementing a level of processing that comes out clean and with no real funk associated with how often anaerobic is marketed. We appreciate his control and intention to processing and have been diehard fans of his coffee since first getting to try it 3 years ago.

Ildefonso Córdoba

Incredibly stoked to release this early 2025 harvest of Sidra from Ildefonso Cordoba from Bruselas in Huila, Colombia. Part of the magically talented Guacharos producer group (also available now as Espresso) who often congregate in nearby Pitalito, Ildefonso is a linchpin of sorts. Acting as the resident seed guy, he’s constantly sharing his knowledge about different cultivars and sharing seed stock with the neighbourhood and other Guacharos members.

This delight of a Sidra is courtesy of our sweet friends at Shared Source, who’ve been buying from the Guacharos group for the past eight years (and no doubt beyond). They’ve built up such a good rapport with these folks that it’s a no-brainer to work with them for treats like this one.

Known as Sidra in Ecuador and nearby Colombia, this is an Ethiopian Landrace variety, rumoured to be a part of variety trials in a private breeding program decades ago in Ecuador and grown by a few farmers throughout these two countries today.
