This Pacas lot is part of José Angel's late harvest from his Cielito plot. Fermentation begins in sealed bags as whole fruit for the trip down the mountain, then depulped and fermented as a traditional washed in concrete tanks without water, resulting in a sweet, nutty, and comforting espresso with mild pear acidity and peanut buttery body and finish.
