  1. What's your water specs? How long should I rest these beans? etc.

    At the roastery/ in Vancouver, we have a quite soft ppm sitting at around 30 with an equal Gh/Kh ratio. That being said we’ve loved how our coffees taste with the Lotus water “light & bright” formula if that’s what you happen to be using. Half strength third wave water gets you close as well. 

    For resting, we start brewing around 7 days after the roast date, and expect it to open up over the subsequent 2-3 weeks. We like brewing on the upward trajectory of a coffee rather than wait to brew at the peak if that makes sense. 

  2. Why do you only sell whole beans and not ground?

    Finding the correct grind for each specific setup and taste preference is a moving target. Time is a factor as well – On day 8 off roast and day 21 of roast for example, you may need to shift the grind. Grinding the whole bag at once locks you into a grind size that may not be optimal over the lifespan of a bag of coffee.

    In the past, we’ve painstakingly dialled in a grind for a customer, shipped the coffee, only to have their expectations not met due to factors out of our control.

    In order to get a great experience brewing and make the most of this beautiful ingredient, we ship whole beans.

  3. How do subscriptions work?

    Subscriptions, our literal pride and joy.

    Rather than being a utilitarian sort of thing, joining us as a subscriber means you’ll get two distinct, unique and delicious coffees each month that ship out all together as a club. We produce a modest zine to go alongside the coffees each month to give you a bit of context/ behind the scenes. Many of our subscribers have been with us for over 3 years and counting! That’s remarkably cool because this is a growing community of coffee nerds who have all enjoyed the same lots (like the Parainema from Grevil Sabillon of Rootbeer Float fame), or Pacas cultivar from José Angel López in Honduras, or the always buttery and floral Nano Genji (Techno Peach!)… and many more delights) as they change slightly with each harvest year.

    Currently, we’re able to ship subscriptions to Canada and the USA only, but we know some folks have been successful using a mail forwarding service to their country. We’re actively looking to add more countries pending shipping rates/logistics.

  4. How do Gift Subscriptions work?

    Gift subscriptions work the exact same way as regular subscriptions, except they don’t recur. So if you get them a 3 month sub, then after the 3rd box ships out thats the end of the gift.

     

     

  5. I missed the subscription cutoff, now what?

    If you sign up just after a batch ships out, that’s usually ok since we built in a grace period of up until the 15th of the month so when you check out, you’ll be paying for the current month’s box – This means if you sign up after the cutoff listed for a given month, but before the 15th, you’ll still be able to squeeze into that month’s shipment.

    If you sign up for a subscription after the 15th, then you won’t be charged until the 1st of the next month.

    If you sign up late but really want the current month’s box, let us know, sometimes we have the ability to ship you that month’s subscription, it just depends on on things like if we have the subscriber coffee available etc.

  6. Do you have a recipe for V60, Aeropress, etc?

    Yup! Take a look at our recipes section for all of that that we will be adding to as time goes on. In addition, take a look at the product pages for kalita filters, there’s a recipe there too 🙂

  7. I just ordered. When do I get my coffee?

    Thanks for ordering! We roast to order Monday-Wednesday and ship out on Tuesdays and Thursdays. From there it can take as little as a day for metro Vancouver, BC, or up to 7 days for the Maritimes or the South East USA. If you want to give us a shout about something specific, please email or DM us.

    We ship via Canada Post or USPS, unless you’ve elected to upgrade to DHL with us. Let us know if you have any questions!
