Pepe’s family farm (Intag Valley, Ecuador), has a philosophy that hinges on wild yeasts and growing ecosystems. This “Wave Honey” includes holding Mejorado fruit in sealed tanks, depulping, then drying the parchment in a controlled dark room. This is a honey, but tastes like a delicate washed.
