Tropical Nectar – long fermentation Tabi from Edilberto Vergara in Huila, Colombia
Tabi is a 3 way cross between Bourbon, Typica and Timor Hybrid. It’s also incredibly delicious. Edilberto Vergara and his family at Las Flores in Acevedo, Huila really make Tabi shine with flavours that remind us both of Loquat, Mangosteen and all manner of tropical things. The multi-step 80+hr fermentation has a lot to do with that.
