**Discounted** Roasted before we closed for the Holidays, it’s the last of this coffee and we thought it deserved to find a happy home.
We are advocates of resting freshly roasted coffee for a couple weeks before getting into it to allow some of the CO2 to dissipate, and these beans are now fully rested and are best if consumed within the next four weeks, though we’ve had some lovely cups of coffee rested for much longer too.

The incredibly talented and passionate folks from the Banko community in Gedeb in the south of Ethiopia are responsible for this dynamic and spiced fruit-forward take on an anaerobic process. Microbes work in a temperature controlled, pressurized, sealed environment to metabolize sugars and transform flavour.

Process

Ripe fruit was selected and sealed in a pressurized, oxygen-free tank and held at a cool 15-18C for 7-10 days, before being transferred to traditional raised beds to be dried with fruit intact.
